Caramel Cashew Squares
Timing and yield were normalized against the listed 8-inch bar method and a standard caramel-cashew square preparation.
Ingredients
Crust
- 1/3 cup firmly packed brown sugar
- 4 tablespoons butter (2 cannabutter, 2 regular)
- 1 cup all-purpose flour
1/4 teaspoon salt
Topping
- 1/2 cup butterscotch-flavored baking chips
- 1/4 cup light corn syrup
- 2 tablespoons cannabutter
- 1 cup chopped salted cashews
Instructions
- Heat the oven to 350°F. Mix the brown sugar with 4 tablespoons of butter until crumbly, then work in the flour and salt.
- Press the crust mixture evenly into an ungreased 8-inch square pan and bake for 11 to 13 minutes, just until set.
- While the crust bakes, melt the butterscotch chips, corn syrup and 2 tablespoons of cannabutter over low heat, stirring until smooth. Do not boil.
- Remove the topping from the heat, stir in the chopped cashews, then spread it over the hot crust.
- Bake for another 8 to 10 minutes until the topping is bubbly and set. Cool completely, refrigerate for clean slicing, and cut into 25 squares.
