Use the result as a scenario, not a black box
Trimming is a throughput problem and a labor-cost problem at the same time. The calculator keeps those two views together. Productivity determines total person-hours. Crew size turns person-hours into elapsed time. Wage and overhead convert the labor requirement into a batch cost and cost per pound.
How the math works
Person-hours = dry pounds ÷ pounds per person-hour. Elapsed hours = person-hours ÷ crew size. Labor cost = person-hours × hourly wage × (1 + payroll overhead). Cost per pound = labor cost ÷ dry pounds.
At 0.12 pounds per person-hour, a 50-pound batch requires about 416.7 person-hours. A six-person crew would need about 69.4 elapsed hours, or 8.7 eight-hour crew days. At $20/hour plus 18% overhead, labor is about $9,833, or roughly $197 per pound.
