Snowcap White Chicken Chili Recipe

Ingredients

White chili

Optional adult finish

Make the recipe cannabis-free. Where legal, use an edible product from a licensed seller to finish one clearly labeled portion for a legal-age adult who has opted in. Edible effects may take up to 4 hours to peak. Store cannabis in its original package, locked away from children and pets.

Directions

  1. Diced onion and green chiles softening in an enamel pot

    Soften the aromatics

Heat olive oil in a large pot over medium heat. Cook onion for 5 minutes, stirring occasionally. Add garlic, cumin and oregano for 30 seconds, then stir in the green chiles. The onion should be translucent and the cumin should smell toasted.

  2. White beans in simmering green chile broth

    Mash half the beans

Mash one drained can of beans with ½ cup of the broth in a bowl. Add the mash, the whole beans and the remaining 2½ cups of broth to the pot. Bring to a gentle simmer and cook 12 minutes. A few flecks of bean skin are fine. The mash thickens the broth as it simmers.

  3. Shredded cooked chicken beside a bowl of creamy mashed white beans

Warm the chicken and smooth the chili

Stir in shredded cooked chicken and bring back to a simmer. Heat to 165°F (74°C). Ladle a little hot broth into a bowl with the softened cream cheese and whisk until smooth. Reduce the heat to low and stir it back into the chili. The broth should coat the back of a spoon. Add a little extra broth if you prefer it looser.

  4. Creamy white chicken chili topped with cilantro and a lime wedge

    Finish with lime

Turn off the heat. Stir in lime juice and salt to taste. Ladle into bowls and top with cilantro and a lime wedge. Prepare any measured adult finish separately. Taste for lime again after salting, especially if the broth or chicken was already seasoned.

Storage Refrigerate the cannabis-free chili in shallow covered containers within 2 hours. Use within 3 days. Bring the chili to a boil when reheating, stir well, then add fresh lime and any optional adult finish off the heat.

Kitchen notes

Tips, swaps and common questions

Match the chile heat to the table

Use mild canned Hatch chiles for the base. For a warmer batch, swap one can for medium or add fresh jalapeño at service.

Temper the cream cheese

Whisking it with hot broth first smooths out the little white lumps that can linger when cold cream cheese goes straight into the pot.

Can I use rotisserie chicken in white chicken chili?

Yes. Remove the skin, shred the meat and measure 3 cups. Taste before adding the full amount of salt because rotisserie chicken is usually seasoned.

What can I use instead of great northern beans?

Cannellini beans work well. Mash one can and leave the second whole, as you would with great northern beans.

Can I freeze white chicken chili?

For the smoothest texture, freeze the cannabis-free chili before adding cream cheese or lime. Thaw in the refrigerator, bring it to a boil, then add the dairy and lime.

Allergens

Milk. Check the broth, cooked chicken and edible cannabis product labels for additional allergens.

Use the product label

Estimate THC in a portion

Transfer a spoonful of warm chili broth from the opted-in legal-age adult's bowl to a separate dish. Melt their measured labeled edible cannabutter into the broth off the heat, then stir it back into their clearly identified bowl. Keep the pot cannabis-free. Use the same unit for the label amount and the amount used.

Enter the label values and the amount you used.

The result estimates the THC added to that portion from the product label. Keep infused portions labeled and secured.
