High-Layer Lasagna Soup Recipe

Ingredients

Tomato and sausage soup

Lemon ricotta

Make the recipe cannabis-free. Where legal, use an edible product from a licensed seller to finish one clearly labeled portion for a legal-age adult who has opted in. Edible effects may take up to 4 hours to peak. Store cannabis in its original package, locked away from children and pets.

Directions

  1. Browned crumbled Italian sausage and diced onion in an enameled pot

    Brown the sausage

Heat the plain olive oil in a Dutch oven over medium-high heat. Break in the sausage and cook 6 to 8 minutes, stirring only when the meat has made contact with the pot long enough to color. Verify it reaches 160°F (71°C). Keep the sausage in small crumbles with browned edges.

  2. Red tomato broth, sausage and broken lasagna noodles in a pot

Simmer the broth and cook the noodles

Turn the heat to medium. Add onion and cook until soft, about 4 minutes. Stir in garlic, tomato paste, oregano and pepper flakes for 1 minute. Add tomatoes, broth and salt. Simmer 15 minutes, stirring occasionally. While the broth simmers, bring a separate pot of salted water to a boil. Add the noodle pieces and cook according to the package until just al dente. Drain and set aside. Stir well during the first minute so the ruffles release from each other.

  3. Lemon ricotta and Parmesan in a small mixing bowl with a fork

    Make the ricotta finish

Stir ricotta, Parmesan, lemon zest and black pepper together. If serving an opted-in adult, transfer their 2-tablespoon dollop to a separate bowl and follow the measured finish. The ricotta should hold a soft mound.

  4. Tomato lasagna soup with a white ricotta dollop and basil

    Build the bowls

Divide the noodles among six bowls and ladle in the tomato broth and sausage. Add the assigned ricotta and torn basil. Keep the cannabis-free ricotta and its spoon separate. Spoon the ricotta onto the broth just before serving so each diner can swirl it in.

Storage Within 2 hours, refrigerate cannabis-free broth, pasta and ricotta in separate covered containers. Use within 3 days. Bring the broth to a boil and reheat any leftover pasta to 165°F (74°C) before adding fresh cold ricotta.

Kitchen notes

Tips, swaps and common questions

Choose sturdy pasta

Use ordinary dried lasagna sheets, mafaldine or another ruffled pasta. Oven-ready sheets can turn soft quickly when boiled.

Keep the pasta out of the storage pot

Noodles keep taking up broth after cooking. Store them separately and add them to each bowl only when you serve.

Can I make lasagna soup without sausage?

Yes. Brown 12 ounces of chopped cremini mushrooms in the olive oil, then use vegetable broth. A pinch of fennel seed brings some of the sausage-style aroma.

Can I cook lasagna noodles directly in the soup?

Yes if you plan to eat it right away. Add extra broth as needed and stir often. For make-ahead soup, cook the noodles separately so they stay firm.

Can I freeze lasagna soup?

Freeze the cannabis-free broth and sausage without the pasta or ricotta for up to 2 months for best quality. Thaw in the refrigerator and bring the broth to a boil before serving.

Allergens

Milk and wheat. Egg is possible in lasagna noodles. Check sausage, broth and any edible cannabis product labels.

Use the product label

Estimate THC in a portion

Stir the measured, labeled edible cannabis olive oil thoroughly into one 2-tablespoon ricotta portion in a separate dish. Put that dollop on the clearly identified bowl for the opted-in legal-age adult. Leave the soup pot and other ricotta cannabis-free. Use the same unit for the label amount and the amount used.

Enter the label values and the amount you used.

The result estimates the THC added to that portion from the product label. Keep infused portions labeled and secured.
