Marry Me Mary Jane Chicken Recipe

Ingredients

Chicken and pan sauce

Optional adult finish

Make the recipe cannabis-free. Where legal, use an edible product from a licensed seller to finish one clearly labeled portion for a legal-age adult who has opted in. Edible effects may take up to 4 hours to peak. Store cannabis in its original package, locked away from children and pets.

Directions

  1. Golden chicken cutlets browning in a dark skillet

    Season and sear the cutlets

Slice each breast horizontally into two thin cutlets. Pound thicker spots between sheets of parchment to about ½ inch (1.3 cm). Pat dry and season both sides with salt and pepper. Heat a 12-inch skillet over medium-high heat. Add the olive oil and sear the cutlets in a single layer, working in two batches if needed. Cook about 3 minutes on the first side and 2 on the second. Move to a clean plate. Look for golden patches and browned bits in the skillet. The chicken finishes cooking in the sauce.

  2. Sun-dried tomatoes and minced garlic sizzling in the skillet

    Build the sauce

Reduce to medium. Stir in the garlic, tomatoes and pepper flakes for 30 seconds. Add the broth and scrape the pan. Simmer until the broth has reduced by about half, 2 to 3 minutes, then stir in the cream. The cream should bubble gently around the edge.

  3. Chicken cutlets in a gently bubbling sun-dried tomato cream sauce

    Finish the chicken

Return the cutlets and their juices. Simmer gently until the thickest part of every cutlet reaches 165°F (74°C), about 4 to 7 minutes. Transfer to individual plates. Turn off the heat and stir Parmesan into the sauce a handful at a time. Stir in the lemon juice and rest 3 minutes. A spoon dragged through the sauce should leave a visible trail for a second.

  4. A chicken cutlet plated with Parmesan, basil and creamy tomato sauce

    Plate with basil

Spoon sauce over the chicken and scatter with basil. For an optional cannabis finish, transfer the sauce for an opted-in adult to a separate small bowl and follow the measured finish before plating. Serve the plain plates first with a clean spoon.

Storage Refrigerate the cannabis-free chicken and sauce in a covered container within 2 hours. Use within 3 days and reheat to 165°F (74°C). Add the optional finish at service.

Kitchen notes

Tips, swaps and common questions

Grate the Parmesan yourself

A fine grate melts into the residual heat. Bring a tight sauce back to spoonable with 1 tablespoon warm broth at a time.

Give the sauce something to cling to

Spoon the cutlets over orzo, soft polenta or garlic mash. Crusty bread works if you want the simplest plate.

Can I make Marry Me chicken with thighs?

Yes. Use four boneless, skinless thighs and allow extra time in the sauce. Check each thickest part with a thermometer for 165°F (74°C).

Can I use dry-packed sun-dried tomatoes?

Yes. Soak them in hot water until pliable, about 10 minutes, then drain, blot and slice. Use the same measured volume.

Can I make Marry Me chicken ahead?

Make and refrigerate the cannabis-free chicken and sauce together. Reheat gently to 165°F (74°C), thinning with broth if needed, and add basil and any measured adult finish at service.

Allergens

Milk. Check broth, tomatoes and any edible cannabis product for additional allergens.

Use the product label

Estimate THC in a portion

Measure a labeled, commercially prepared edible cannabutter using the package directions. Whisk it into the warm sauce for one opted-in legal-age adult off the heat, then pour that sauce onto their clearly identified plate. Keep the skillet and serving spoon cannabis-free. Use the same unit for the label amount and the amount used.

Enter the label values and the amount you used.

The result estimates the THC added to that portion from the product label. Keep infused portions labeled and secured.
