Ingredients
Chimichurri
Make the recipe cannabis-free. Where legal, use an edible product from a licensed seller to finish one clearly labeled portion for a legal-age adult who has opted in. Edible effects may take up to 4 hours to peak. Store cannabis in its original package, locked away from children and pets.
Directions
-

Soften the garlic
Combine the vinegar, garlic, pepper flakes and salt in a small bowl. Let stand for 10 minutes while you chop the herbs. The garlic should smell less sharp and the flakes should soften slightly.
-

Chop the herbs by hand
Pat the parsley and oregano dry. Strip off any tough stems, then chop the leaves with a sharp knife. Stir the herbs and lemon zest into the vinegar. Look for fine, distinct flecks of green.
-

Stir in oil and let it settle
Stir in the plain olive oil and let the mixture sit for 15 minutes. Stir again and divide into about eight 1½-tablespoon portions, adjusting for the actual yield. The oil and vinegar may separate as the sauce sits. Stir before portioning.
-

Spoon over dinner
Serve the sauce with grilled meat, beans or roasted vegetables. Use a separate dish and spoon for the optional adult finish. Put it on the plate after cooking to keep the herbs lively.
Storage Refrigerate the cannabis-free chimichurri promptly in a covered container at 40°F (4°C) or below. Use within 3 days. Keep any cannabis oil in its original labeled container and add it at service.
Kitchen notes
Tips, swaps and common questions
Swap the oregano
Use 2 teaspoons dried oregano in place of the fresh leaves. Add it to the vinegar with the garlic so it can soften.
Keep the chopping board dry
Wet herbs make the sauce watery. Dry the leaves, then make clean cuts with a sharp knife for better texture.
Can I use a blender for chimichurri?
A few short pulses are fine, but hand chopping keeps the herbs distinct and helps the sauce stay loose rather than turning pasty.
Can chimichurri be made ahead?
Make the plain sauce up to a day ahead and refrigerate it promptly. Stir it before serving and add any measured cannabis olive oil separately at service.
What does chimichurri go with besides steak?
Try it with crispy potatoes, white beans, roasted mushrooms, grilled chicken or cauliflower. Its vinegar and herbs cut through rich, buttery dishes.
Allergens
Check the vinegar and edible cannabis product labels for added sulfites or other allergens.
Use the product label
Estimate THC in a portion
Transfer one portion of plain chimichurri to a separate dish for an opted-in legal-age adult. Stir in the measured labeled edible cannabis olive oil just before serving. Clearly identify that dish and leave the shared sauce cannabis-free. Use the same unit for the label amount and the amount used.
The result estimates the THC added to that portion from the product label. Keep infused portions labeled and secured.
