Cranberry Brie Puff Pastry Bites

Ingredients

Set up Keep the pastry cold enough to lift cleanly and grease 16 mini muffin wells. Chill the brie before cutting it so the cubes hold their shape.

Directions

  1. A sheet of puff pastry cut into small squares

    Cut the puff pastry

Heat the oven to 400°F. Unfold the cold pastry and cut 16 roughly 2¼-inch squares in four rows of four.

  2. Squares of puff pastry fitted into a mini muffin tin

    Line the mini wells

Center a square in each mini muffin well and press the base lightly into the tin. If the dough softens, refrigerate the pan while you cut the cheese.

  3. Mini pastry cups filled with cranberry sauce, brie, and pecans

    Fill the cups

Add about a teaspoon of plain cranberry sauce and one piece of brie to each cup. Scatter the chopped pecans over the top.

  4. Baked cranberry brie bites with golden edges and fine orange zest

    Bake and brighten

Bake about 15 minutes, until the pastry is puffed and golden. Let the cups rest in the pan for 5 minutes before lifting them out. Finish with orange zest and rosemary. If using cannabutter, measure it over an individual plate after baking.

Storage Refrigerate leftovers within two hours. Keep any infused bites clearly labeled and separate.

Kitchen notes

Keep the filling inside the pastry

What size are the brie pieces?

Cut a single cold 3-ounce piece into 16 small cubes. Each well needs just enough cheese to melt around the cranberry.

Can I set these up ahead?

Cut the pastry and cheese while they are cold. Keep them chilled separately and fill just before baking to preserve the flaky base.

Use the product label

Estimate THC in a portion

Measure only the butter added to the selected bite or plate. Use the same unit for the label amount and the amount used.

Enter the label values and the amount you used.

The result estimates the THC added to that portion from the product label. Keep infused portions labeled and secured.
