Oregon Coast Dungeness Crab Melts

Ingredients & directions

Broiled Dungeness crab and white cheddar toasts

Ingredients

Crab toasts

Lemon butter

Pick through the cooked crab with clean fingers to remove shell fragments, then blot away surface moisture. Use a rimmed metal baking sheet without parchment under the broiler.

Directions

  1. Four thick sourdough slices toasting on a rimmed metal sheet

    Toast the sourdough

Heat the oven to 425°F (220°C) with a rack in the upper third, at least 6 inches from the broiler. Put the bread on the metal sheet and toast about 5 minutes, turning once, until the surface is dry and lightly golden.

  2. Folding the cooked crab flakes gently into the lemon, mayonnaise and chive dressing

    Dress the crab lightly

Stir the mayo, Dijon, zest, 2 tsp lemon juice, half the chives and pepper together. Fold the cooked crab in gently to keep some flakes intact. Divide the mix over the 4 toasts and scatter the cheddar in a thin layer.

  3. White cheddar blistered in spots on four crab melts just out of the broiler

    Warm, then broil

Bake about 5 minutes to warm the filling, then broil 1 to 2 minutes, watching continuously until the cheddar bubbles and browns in spots. If you used leftover crab, check that the filling reaches 165°F (74°C) in the center. If the cheese browns first, turn off the broiler and finish heating in the oven.

  4. A small spoon adds lemon butter to one separately plated crab melt

    Finish at the table

Stir the remaining 1 tsp lemon juice into the melted plain butter. Spoon a little over the warm toasts and scatter the remaining chives. For an optional infused toast, stir measured cannabutter into a separate spoonful of the lemon butter and use it only on that identified plate. Serve with lemon wedges.

Storage Serve freshly broiled for crisp bread. Refrigerate the plain crab mixture at 40°F (4°C) or below, use within 1 day of mixing or by the crab package date if sooner, and avoid leaving it out longer than 2 hours.

Kitchen notes

Keep the crab sweet and the bread crisp

Can I use frozen crab?

Yes. Use fully cooked crabmeat thawed in the refrigerator. Drain and blot it so water from the crab stays out of the toast.

How much cheese should cover a crab melt?

Use a thin, even layer. About ¾ oz of grated sharp cheddar per slice lets the crab flavor come through and browns quickly.

What makes Dungeness an Oregon Coast choice?

Oregon’s fish and wildlife department describes Dungeness as a prized crab along the coast, known for its sweet meat.

Use the product label

Estimate THC in a portion

Measure the cannabutter that goes into the lemon butter for one toast. Use the same unit for the label amount and the amount used.

Enter the label values and the amount you used.

The result estimates the THC added to that portion from the product label. Keep infused portions labeled and secured.

THC in one portion = label THC (mg) × amount used ÷ label amount.

A label showing 4 mg THC per 2 g gives an estimated 2 mg THC for one toast with a 1 g amount.

Use a labeled edible product for a consenting legal-age adult where permitted. If you are new to edibles, Health Canada suggests choosing 2.5 mg THC or less. Full effects can take up to 4 hours. Keep infused servings separate, labeled and locked away from children and pets.
