Baked New England Apple Cider Doughnuts

Ingredients & directions

Cinnamon-sugar cider doughnuts

Ingredients

Doughnut batter

Cinnamon sugar

Grease two standard 6-well doughnut pans or use one in batches. A small pitcher or a bag with the corner snipped makes it easier to fill the ring-shaped wells.

Directions

  1. Reduced apple cider being poured from a small saucepan into a heatproof measuring cup

    Reduce and cool the cider

Simmer the cider in a small saucepan over medium heat until it measures ½ cup, about 20 to 25 minutes. Cool it in a shallow cup while you measure the other ingredients. Heat the oven to 350°F (175°C).

  2. A spatula gently folds the spiced apple cider doughnut batter

    Mix a tender batter

Whisk the flour, baking powder, baking soda, cinnamon, nutmeg and salt. In another bowl whisk egg, brown sugar, buttermilk, cooled cider reduction, 3 tbsp melted butter and vanilla. Fold into the dry ingredients just until no flour streaks remain.

  3. Baked golden rings cooling in a metal doughnut pan and on a rack

    Bake the rings

Fill the wells about two-thirds full. Bake 10 to 12 minutes, until the tops spring back when touched and a tester comes out clean. Cool in the pans for 5 minutes, then turn out onto a rack.

  4. Brushing melted butter onto one separate doughnut before its cinnamon-sugar coating

    Coat with cinnamon sugar

Combine the granulated sugar and cinnamon. For any infused serving, first set one doughnut on its own plate. Mix the individually measured cannabutter with a little plain melted butter and brush that doughnut separately, then coat with its own pinch of cinnamon sugar. Brush and dip the other rings with the plain butter and remaining cinnamon sugar.

Storage Plain coated doughnuts are best the day they’re baked. Keep them airtight for up to 2 days. Freeze uncoated rings, then warm and coat them after thawing.

Kitchen notes

Get real cider flavor into the crumb

Do I need to reduce the cider?

Yes. Measuring the reduction to ½ cup gets more apple flavor into the batter without adding extra liquid.

Can I use a muffin pan?

The batter works as small muffins. Fill the greased wells about two-thirds full and begin checking at 14 minutes. Treat each muffin as its own portion if adding a finish.

Why did my doughnut holes close?

The batter rises over the center post when the wells are filled too high. Two-thirds full leaves room for the ring shape.

Use the product label

Estimate THC in a portion

Measure only the cannabutter brushed onto one doughnut. Use the same unit for the label amount and the amount used.

Enter the label values and the amount you used.

The result estimates the THC added to that portion from the product label. Keep infused portions labeled and secured.

THC in one portion = label THC (mg) × amount used ÷ label amount.

If the label shows 3 mg THC per 2 g, a 1 g amount contributes an estimated 1.5 mg to one doughnut.

Use a labeled edible product for a consenting legal-age adult where permitted. If you are new to edibles, Health Canada suggests choosing 2.5 mg THC or less. Full effects can take up to 4 hours. Keep infused servings separate, labeled and locked away from children and pets.
